Slow Cooked Lamb Shanks

Serves: 2-4

Slow cooked lamb shanks is there anything better?? Meat that tender and juicy it is falling off the bone. Try these slow cooked lamb shanks.


4-6 trimmed lamb shanks
750 ml (1 bottle) red wine
6 garlic cloves, crushed
1 bouquet garni
2 onion, quartered
2 carrot, chopped
Lamb or chicken stock
2 tbsp tomato paste

Marinade the lamb shanks in the red wine over night

Place the lamb shanks, red wine, bouquet garni, garlic, 1 chopped onion, 1 chopped carrot into a slow cooker

Pour in enough stock to cover your lamb shanks

Using the low setting on your slow cooker, cook the lamb shanks for 10-12 hours

Remove the lamb shanks and strain the liquid into a saucepan.

Over a high heat, start reducing the liquid.

Add in your remaining carrots and onion when the liquid has reduced by a quarter, and continue to reduce until there is half or even less liquid. The more you reduce the more concentrated it will become.

Add the tomato paste, and season to taste. If you want, you can add in some fresh herbs as well. Rosemary, thyme go well.

Serve the slow cooked lamb shanks with mashed potatoes and enjoy....

Notes: if you do not have slow cooker, use a suitable size casserole dish. Cook in the oven at 140c for 3-4 hours. The meat should be falling off the bone when done.
