Beef Stroganoff

This beef stroganoff is easy to make and tastes fantastic. Try this beef stroganoff tonight.


750g eye fillet
50g butter
1 onion, thinly sliced
3 cloves garlic, crushed
1 1/2 tbsp paprika
300g button mushrooms sliced
3 tbsp olive oil
2 tbsp tomato paste
300ml sour cream
salt and pepper
juice of half a lemon
fresh parsley, chopped


Slice beef into 1cm strips.

In a heavy dish on a medium heat then melt butter and fry garlic and onion until soft. Add paprika and cook for a couple of minutes.

Add mushrooms and cook for a further 3-5 minutes, remove contents and set aside. If pan is dry, add a dash of white wine finish and deglaze.

Set aside deglazed juice with onion and mushrooms.

Season beef with salt and pepper, return pan to heat, add half the olive oil and seal and caramelise beef in two or three batches.

Remove beef and set aside.

Return mushroom, onion and deglazed juice mix to pan, pour in cream and tomato paste, bring to the boil and simmer for a minute until it starts to reduce.

Return steak to pan with lemon juice and some parsley.
