This is an old fashioned recipe for Victoria Sponge and it is my favourite. You could use butter but margarine makes the sponge lovely and light.

Top with buttercream icing, get out the sprinkles and get decorating!


2 eggs - weighed in their shells
The same weight of self raising flour, margarine and caster sugar
1 teaspoon baking powder
1-2 tablespoons hot water
1/2 teaspoon vanilla extract

125g unsalted butter
1/2 tsp vanilla extract
250g icing sugar
2-3 tbsp semi skimmed milk


Beat sugar and margarine until light and fluffy.

Sieve the flour and baking powder and mix thoroughly.

Beat the eggs with the vanilla then add them in a little at a time. Add some sieved flour with the last bit of egg.

Add the rest of the flour and a tablespoon of the hot water and beat quickly. If the mixture is not of dropping consistency then add a bit more hot water.

Spoon the mixture into 12 cupcake cases and bake for 15-20 minutes at 180 degrees (160 fan oven) until the cakes are springy to the touch.

To make the icing, beat the butter using electric beaters until very soft. Add the vanilla, milk and sifted icing sugar and beat until really light and fluffy (about 5 minutes).
