Delightful sugary balls. Serve with softly whipped cream and raspberries.


150g egg whites
300 caster sugar


Spread the sugar onto a lined baking sheet and place in the oven at 200 degrees for about 8 minutes until the sugar starts to dissolve at the edges.

Just before the sugar is ready start to beat the egg whites for a minute, then slowly add the sugar, whisking all the time (use a freestanding mixer).

Turn the oven down to 100 degrees.

Beat on full speed for about 10 minutes until the mixture is silky and cold.

Place in large dollops (you will get 6 meringues) onto a lined baking sheet and bake for 2 hours at 100 degrees.
