Who can resist some chocolate brownies? Try adding nuts, chocolate chunks, whatever you like to the mix.


200g unsalted butter
280g plain flour
1/2 teaspoon salt
300g dark chocolate (I used 55% cocoa)
220g caster sugar
2 medium eggs
1 teaspoon vanilla essence
100g white chocolate (chopped into small chunks)


Melt the butter and chocolate over a bowl of gently simmering water. Don't let it get too hot and remove from heat as soon as it is melted.

In a large bowl, whisk the eggs, vanilla and sugar together until just combined.

Sift the flour and salt together.

Fold the chocolate mixture into the egg mixture, then fold in the flour and lastly the chocolate.

Bake at 180C for 20-25 minutes. Do not overcook them - they should be very moist.
