Wholemeal Pancakes


Whipped these up this morning because it was so cold and the kids requested pancakes for brekky! The Wholemeal Pancakes were topped very nicely with Banana, Honey and fresh Macadamias from my sister's tree.


3/4 cup wholemeal self raising flour
3/4 cup wholemeal plain flour
1 egg
1 tbs raw sugar
1/2 cup rice milk
1/2 cup water
1 tsp vanilla
1-2 bananas
1/4 cup macadamias, ground
honey to serve


Combine flours and sugar.

Make a well in the middle and add egg, milk, water and vanilla.

Stir until bubbles start to show - you may need to add another 1-2 tablespoons of water to get the desired consistency.

Melt a little butter in a frying pan.

Add some pancake mixture and cook until bubbles show.

Flip over and cook until golden.

Serve pancake with siced bananas, drizzle with honey and sprinkle with ground macadamias.

If you have fussy kids you can place the slices of banana in the pancake mixture and cook as above.
