Mmm.. these are so good, chewy and sweet and they don't have that salty aftertaste that you often get with home backed biccies. Very Yummy..

This is my favourite chewy choc-chip cookie recipe. You will want to eat these straight out of the oven, so try and leave some to cool down first.

Ingredients

600g Chocolate of your choice(dark, milk white)
2 cups of plain flour
1 tsp baking powder
1 tsp salt
250g softened butter
2/3 cup light brown sugar
1/4 cup dark brown sugar
2/3 cup granulated white sugar
1 tsp vanilla essence
2 tbsp water
1 egg
125g almonds, roughly chopped
125g macadamia nuts roughly chopped
125g skinless hazelnuts, roughly chopped

NOTE:
If you prefer leave the nuts out and replace with more chocolate

Method

Preheat oven to 180C

Break the chocolate into squares, about 2cm each. If the milk and dark chunks are too small they will melt away.

Sift together the flour, salt and baking powder into a bowl

Using a mixer, cream the butter and mix in the three types of sugar.

Add the vanilla essence, water and egg. Beat together

Beat in the flour mixture

Stir in the chocolate chunks and nuts. The mixture should be coming away from the sides of the bowl into a ball.

Drop balls of the mixture, well spaced onto a lined baking tray. Use a dessert spoon for big cookies, tea-spoon for small.

Bake the cookies for 10 minutes or until golden.xsx
