Chocolate Muffins

Delicious muffins that are very quick to whip up. Make sure you use good quality chocolate and cocoa as it makes all the difference.


250g plain flour
30g cocoa
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
300g chocolate (mix of dark, milk and white) chunks
2 eggs (beaten)
284ml sour cream
85g light muscovado sugar
85g butter, melted


Combine flour, baking powder and bicarbonate of soda and sift well.

Add chocolate chunks.

In a separate bowl, mix the beaten eggs, sour cream, butter and sugar.

Add sour cream mixture to the dry ingredients and stir until just combined but be careful not to overmix.

Spoon the mix in 11 muffins cases and bake for 20 minutes until well risen.

When cooked, leave in the tin for 15 minutes as the mixture is very tender.

Remove from the tin and leave on a wire rack to cool.
