Grilled Pork Skewers

These are really simple to make and are extreamly tasty. When possible these skewers are best cooked on a open grill, preferably a over glowing coal embers.


300g pork loin or neck
50g pork back fat (optional)
12-15 bamboo skewers
about 1/4 cup coconut cream

1 tsp cleaned and chopped coriander roots
pinch of salt
1 tsp chopped garlic
1/2 tsp ground white pepper
2 tbsp shaved palm sugar
dash of dark soy sauce
2 tbsp fish sauce
2 tbsp vegetable oil


Slice pork into 2cm square pieces. If you are using back fat, cut into small rectangles 2cm x 1/2 cm

Using a mortar and pestle, pound coriander root, salt, garlic, pepper into a fine paste

Combine with the sugar, soy sauce, fish sauce, and oil.

marinade the pork in this mixture for 3 hours or best left overnight in the refrigerator

Soak bamboo skewers in water for about 30mins to prevent them catching on fire

Thread the pork onto the skewers. If using back fat, thread the fat onto the skewers after every third piece of pork.

Gently the skewers on an open grill, preferably over glowing coal embers.

Turn the skewers quite often to prevent charring. Dab them with the coconut cream as they grill.

Serve and enjoy.
