Blueberry muffins

Serves: 10

I love blueberry muffins. The lemon sugar tops really give these muffins a tart bite.


380g flour
150g sugar
Pinch salt
2 tsp baking powder
1 tsp baking soda
300ml buttermilk
150g butter
2 eggs
1/2 cap vanilla essence
2 punnets blueberries

100g castor sugar
zest of 1 lemon


Combine flour, sugar, salt, baking powder and baking soda into a large bowl, stir with a whisk.

Melt the butter. Break eggs into a separate bowl, stir in buttermilk, vanilla and melted butter.

Add this to the flour all at once.

Gently fold to combine wet and dry ingredients, leaving a few lumps so dough is not overworked.

Add fruit half way through folding action; for best results dough should still be warm and fluffy.

Fill patty pans, then sprinkle tops with lemon sugar.

Bake at 150°C for 25-30 minutes.

Muffins will be golden on top and spring back like sponge when tapped on the top.
