Mango Dacquiri


These are another Christmas essential for us as Mangoes are very cheap and in season. We buy them by the box, cut off the cheeks and freeze just write the quantity of mangoes in each freezer bag and bag in groups of two mangoes


2 large mangoes chopped
12 icecubes
1/4 cup water
1/4 cup of castor sugar
1/2 cup of lemon juice ( I use the lemon squeeze you find in supermarkets if I have no lemons)
3/4 cup bicardi white rum


Put all ingredients in a blender or smoothie maker, blend till all mixed and ice is crushed

If you only have a food processor, crush the ice with a wooden rolling pin between tea towels and other ingredients and blend till as smooth as you can get it.
