Easy shortbread


This is probably like selling coals to Newcastle, but I used to be a food teacher and this was one all the kids loved to make and it always worked. If you want you can dip the ends in chocolate


250g butter
1/3 C pure icing sugar
1/3 Cup cornflour
1/4 Cup of A1 or castor sugar ( I prefer castor)
1/2 teaspoon vanilla extract
2 1/3 cup of sifted flour


Melt butter ( I use the microwave )and allow to cool slightly

Sift together sugars and cornflour add butter and vanilla and beat until thick and creamy

Add sifted flour mix well with hands until comes away cleanly from the bowl, knead gently in bowl till smooth

Press into rectangular slice tray or 2 x 20 cm round cake tin lightly greased.

Smooth over with spatula and mark into fingers or wedges and prick each with a fork.

Press around outer edge with fork or thumb to create and edge.

Bake 180*C for 30 mins or just a little colour. Recut through marks whilst still warm cool in pan, then turn out onto cooling tray
