When the kids were little, a group of mother's made these each week for sale at the school canteen, they are very easy to make and everyone loves them
The recipe can easily be halved if you don't want to make as many.


4 Cups of SR Flour
1 Cup of sugar A1
3 Cups of milk
4 Eggs
60 g melted butter
1 teaspoon bicarb soda
2 teaspoon white vinegar


Beat eggs and milk together, add to sifted dry ingredients. Add melted butter and vinegar and mix well.

Use 1/4 cup measure and 1/2 full for portion size. Cook in greased frypan ( I used to use my electric frypan ) or griddle on moderate heat.

They are ready to turn when bubbles appear on top.

Pikelets should be golden brown when cooked

Serve buttered or with jam or cream or any topping of your choice
