Anzac Biscuits

It is coming up to Australia Day, so these are always popular and we also made these for our school canteen and they were a hit there as well.

Ingredients

1 cup of rolled oats
3/4 cup of dessicated coconut
1 cup plain flour
1 teaspoon bicarb soda
1 cup of A1 sugar
1/2 cup of butter (125g)
1 Tablespoon of golden syrup
2 Tablespoons of water

Method

Melt butter. golden syrup and water in microwave approx 1 minute

Add bicarb soda and remaining dry ingredients whilst mixture is still fizzing

Place 1 Tablespoon of mixture on greased tray until tray if full allow room for biscuits to spread.

Bake in 150 - 180*c oven for 15 - 20 mins

Allow to cool slightly on tray till just hard and then transfer to cooling tray
