Spiced pumpkin soup

Time Cooking: 1 hour

This is a great soup base that you can play around with to get some different flavours.


Olive oil
3 butternut pumpkins (peeled and chopped up)
3 large onions
3 pints stock (vegetable or chicken)
1 can coconut milk
Salt and pepper
Spices (curry powder, coriander, cumin, turmeric)


Lug a bit of olive oil into a pan and fry the onions until soft.

Add the pumpkin and cover with the stock.

Simmer for an hour or so until the pumpkin is cooked and soft.

Take the pan off the heat and blend until smooth.

Put back on the heat and add the coconut milk.

Now comes the fun bit! Season with salt and pepper and your choice of spices to taste. I added some chili powder too.

Next time I make it, I am going to roast the pumpkin along with about 3 cloves of garlic.
