Coconut ice cream


This ice cream is creamy and has a beautiful velvety texture. You cannot beat good homemade ice cream!


2 medium eggs
3/4 cup (180 ml) sugar
2 cups double cream
1 cup coconut milk
1 cup dessicated coconut


Whisk the eggs until light and fluffy with electric beaters.

Add the sugar gradually while whisking and whisk until fully incorporated.

Add the cream and coconut cream and whisk to blend.

Pour into an ice cream machine and churn until thick (as per machine instructions).

Just before the end of churning, add the dessicated coconut.
