Chorizo pasta

Time Cooking: 30 minutes

This is true comfort food and one of my favourite meals. Make sure you use proper good quality sweet smoked paprika as it will affect the flavour (we use El Avion brand).


Olive oil
1 good quality chorizo sausage
1 red onion
2 cloves garlic
Small glass of red wine
1 teaspoon dried chilli flakes
1 teaspoon sweet smoked parpika
Lemon juice
Salt and pepper
Handful of toasted pine nuts


Slice the onion in half then chop so you have 1/2 onion slices about 1cm wide.

Crush or grate the garlic.

Chop the chorizo into chunks about 1 inch wide.

Add a couple of tablepoons of olive oil to a frying pan, then and add the onion, garlic, chorizo, chili flakes, a grind of salt, pepper and the paprika.

Gently fry for about 5 minutes, then add the wine and let it simmer gently for about 30 minutes by which time the wine will have reduced down and the chorizo will be cooked (see 3rd pic). Add a good squeeze of lemon juice.

Boil just enough spaghetii for 2 people and when al dente add it to the frying pan. Note - add the pasta in stages as you want it all to be well coated in the sauce so don't add too much pasta.
