Chorizo, Lentil & Goat Curd Pasta

Serves: 4-6

This is a really simple to make recipe. I love to have some crusty bread with my chorizo, Lentil & Goat Curd Pasta


400 gram Conchiglie Pasta
2 Tablespoon Olive oil
2 Chorizo sausages -sliced
200 gram Swiss brown mushrooms -sliced
3 Garlic cloves -sliced
3/4 Cup Dry sherry
400 gram canned lentils -rinsed and drained
125 gram Goat's curd (or soft goat's cheese)

Extra virgin olive oil for drizzling
Sea salt and cracked black pepper


Cook pasta in salted boiling water

Drain and keep warm

Heat the oil in a large, non stick frying pan on high heat

Add chorizo, mushroom and garlic

Cook for 1-2 min until browned

Add sherry and lentils and cook for 2 min, or until slightly reduced

Add the pasta, salt and pepper and cook for 1 min

Top with goats curd and drizzle with olive oil to serve
