Cheeky Fast Frittata

As a man with several Italian in-laws in the family to impress one afternoon when they popped in for a visit, this recipe was purely made up on the run and pleased all the rello's first attempt.


350g Leggo's Semi-Dried Tomato, Basil & Parmesan stir through sauce
500g Coon Shredded Tasty Cheese
6-8 Medium size Zucchini grated
8-10 Eggs lightly beaten
Pepper to season (No Salt)
Olive Oil Spray


Heat oven to 200C

Spray Olive Oil inside 25cm square Pyrex Dish or Foil Tray (disposable) to ensure non-stick.

Place the Zucchini in a non stick pan with a touch of olive oil and heat through for 5 minutes seasoning with pepper.

Add Leggo's Stir through to cooked Zucchini.

Scatter the cheese across the top.

Poor beaten eggs evenly across the top.

Bake for 20 minutes or until egg is firm.

Slice into squares and serve hot or cold.
