I left out the hot chillies and de-seeded the red chilli to make it child friendly. I also left out the dark soy sauce and put in a tbsp of soy sauce instead. It was mighty tasty.

This is a spicy, tasty and simple to make stir fry.


200g minced chicken or sliced chicken breast
1/2 brown onion, sliced length-wise
1/4 cup Thai basil leaves
1 red chilli sliced
1-3 baby hot chillies
1 tbsp crushed garlic
2-3 tbsp water or chicken stock

Seasoning Sauce
1 tbsp fish sauce
1/2 tbsp sugar
2 tbsp oyster sauce
1 tsp soy sauce
1/2 tsp black soy sauce


Pound garlic and hot chillies together

In a wok, add oil over high heat and in pound chillies and garlic. Mix well together until delicious aroma

Add chicken and fry for 3 mins

Then add in seasoning sauce and stock

Stir well together for 2 mins then add in onions and Thai basil leaves and chillies

Serve with rice and enjoy
