Fluffy Vanilla Frosting


I love this light as air frosting - particularly on chocolate cupcakes.


2 tablespoons (40ml) milk (this recipe uses Australia tablespoon of 20ml)
1/3 cup (80ml) water
1 cup (220g) caster suger
1 teaspoon gelatine
2 tablespoons (40ml) extra water
250g butter (softened)
1 teaspoon vanilla extract


Combine the milk, water and sugar in a pan and stir over a low heat without boiling until sugar has dissolved.

Sprinkle the gelatine over the extra water in a cup and stir until gelatine has dissolved. Add to sugar mixture.

Cool to room temperature.

Beat the butter until as white as possible and fluffy.

While still beating, gradually add the sugar syrup and continue to beat until the mixture is very light and fluffy (this may take some time so be patient as the result is worth it!)
