Brie and pesto pork medallions

Serves: 2

This is really simple to make and super tasty.


2 pork medallion (1 per serve)
4 tbsp basil pesto (2 per serve)
2 wedges brie (2 cm wedge per serve)
salt and pepper for seasoning
sage optional


Preheat oven 200C

Heat a oven proof frying to medium high heat

With a sharp knife cut a slit in the pork.

Spread a tablespoon of basil pesto, and place in a wedge of brie in each peice of pork

Season the pork with salt and cracked pepper

Brown one side of the pork on the stove top.

Cook for around 3-4 minutes on one side then turn. It should be starting to go a light brown.

Once the pork has been turned over, spread the remaining basil pesto on top of the cooked side and place on the sage if using

Place the pork in the oven until cooked through.

Serve with jacket potatoes
