When I make carbonara i like to add in 1 tsp oregano and 1 tsp paprika, and a little sprinkle of chilli powder. It will make all the difference to your carbonara sauce.

I love Fettuccine Carbonara and it is one of my all time favourites. Carbonara is so easy to make and to have all the ingredients at hand. Try this Fettuccine Carbonara you will love it.


2 tsp olive oil
200g sliced pancetta or bacon, roughly chopped
3 garlic cloves, crushed
2 egg yolks
2 eggs
1/2 cup thickened cream
75g parmesan cheese, finely grated
250g Fettuccine

optional pinch of oregano and paprika

Heat oil in a large, non-stick frying pan over medium heat.

Cook fettuccine as per instructions and set aside

Add pancetta or bacon and garlic. Cook, stirring, for 5 minutes or until pancetta or bacon is crisp. Drain on paper towel.

Whisk egg yolks, eggs, oregano, paprika, cream and three-quarters of the parmesan together in a bowl .

Add egg mixture and pancetta mixture to pasta.

Season with salt and pepper.

Toss over low heat until well combined.

Serve the fettuccine carbonara with remaining parmesan.
