Chocolate Brownies

Time Cooking: 40 minutes

Moist, chocolatey brownies. Delicious on their own or with a scoop of good vanilla ice cream.


140g unsalted butter
200g dark chocolate
200g light muscovado sugar
2 teaspoons vanilla extract
2 eggs
1 egg yolk
85g plain flour
75g walnuts


Preheat oven to 160 degrees and grease and line an 18cm square cake tin.

Place the butter and chocolate in a bowl over a pan of simmering water and melt.

Remove from heat and allow to cool slightly.

Beat the sugar, vanilla and a pinch of salt into the chocolate mixture.

Whisk the eggs together and add in 3 lots, beating after each addition.

Add the flour and mix until smooth.

Fold in the walnuts and pout mix into pan.

Bake for 40 minutes or until a skewer comes out with a few moist crumbs attached.

Cool in pan then turn out onto a wire rack to cool completely.
